Recipe Costing and Nutrition Labels for Bakeries

A bakery runs on a few base doughs and batters turned into many products, sold in several package sizes. KitchenSync models that directly: nested recipes for the bases, versions for the variations, presets for the packages, and a cost per piece for every one.

Build once, reuse everywhere

Make your sweet dough, pie crust, buttercream or ganache a recipe of its own, then use it as an ingredient in every product that contains it. Its nutrition carries through to each product, and saving a change to the base updates the nutrition everywhere it is used. The recipe's cost does not carry over yet, so give the base ingredient a price yourself if you cost those products. Nested recipes are on the Starter and Growth plans. Within a single recipe, named ingredient sections keep the dough, the filling and the topping separate, and you can drag ingredients between sections.

Yield after baking

Baked goods lose moisture in the oven, so the weight that goes in is not the weight that comes out. Pick the cooking method for the recipe (KitchenSync has 28) and the yield calculator wizard estimates the cooked yield from typical moisture loss. It also flags water-absorbing ingredients such as rice, pasta and beans. Nutrition per serving and cost per serving are then based on what you actually sell, and you can always weigh a finished batch and enter the real yield instead. See recipe yield.

Cost per piece, not just per batch

Enter what you pay for flour, butter, sugar, chocolate and the rest, from as many suppliers as you use, and KitchenSync costs the batch at the best unit price for each ingredient. Set the serving size to one cookie, one slice or one loaf and you get the cost per piece. The recipe multiplier scales every amount when you move from a test batch to a production batch. See recipe costing.

Variations without losing the original

Bakers test constantly: less sugar, a different flour, browned butter. Save each attempt as a linked recipe version and mark the one you sell as primary. Every version has its own Nutrition Facts label, allergen flags and cost, so you can see what a change does to all three before it reaches the case.

Labels for every package

Retail packaging needs a Nutrition Facts label in the FDA format. KitchenSync builds one from the recipe, with serving size, servings per container, serving description and "about" servings for products like a bag of cookies. Save each package (a single cookie, a 6-pack, a dozen) as a label preset, reuse it across recipes, and generate labels for several presets at once. Export as PNG or copy to the clipboard, with no per-label fees. See the nutrition label generator.

Allergens bakeries deal with daily

Wheat, milk, eggs, soy, tree nuts, peanuts and sesame all turn up in a bakery. KitchenSync flags the FDA's nine major allergens from USDA ingredient descriptions and shows them as icons on each ingredient and in a combined "Contains" line for the recipe. It cannot see cross-contact from shared equipment, so treat it as a check. See allergen detection.

Plans

Free covers one recipe. Starter is $14.99/month for 25 recipes and Growth is $29.99/month for 100, both with nested recipes and multi-supplier costing. See the pricing page.

Frequently asked questions

Can I use a dough or frosting recipe inside other recipes?

Yes, on the Starter and Growth plans. Its nutrition carries into every recipe that uses it, and changes to the base update that nutrition. Its cost does not carry over yet, so price the base ingredient yourself.

How does KitchenSync handle weight lost during baking?

Choose a cooking method and the yield calculator wizard estimates cooked yield from moisture loss. You can also enter the weight of a finished batch as the yield.

Can I make labels for different pack sizes of the same product?

Yes. Save each pack size as a label preset and generate labels for several presets at once.
